I frequently put this recipe on rotation while camping and at the beach house during the summer. It’s so quick and easy to prepare, with minimal ingredients needed. I have also made this using a whole, boneless pork tenderloin. Cook and then cut into thin slices and place on toasted ciabatta with Caesar dressing, romaine and freshly shaved Parmesan. Equally Delicious!

Ingredients:

  • 1 pound of fresh boneless, skinless chicken breast (thin chicken cutlets preferred, but you can use anything from rotisserie chicken to chicken tenderloins)
  • Lemon pepper seasoning
  • Ciabatta rolls (toasted)
  • Caesar dressing
  • Romaine lettuce, chopped
  • Freshly grated Parmesan cheese
  • Red onion slices (optional)

I use Cardini’s brand Caesar dressing, but you can absolutely try a homemade version (no anchovies!)

Ingredients:

  • ½ cup mayonnaise
  • 1 medium garlic clove, minced

  • ⅓ cup (1 ounce) finely grated Parmesan cheese

Instructions:

Instructions:

  1. Grill or Sauté the Chicken: If you’re not grilling, melt 1 tablespoon of butter and 1 tablespoon of olive oil in a pan over medium-high heat. Season the chicken generously on both sides with your choice of spices—I highly recommend lemon pepper seasoning, as it pairs wonderfully with Caesar dressing. You can use thin chicken cutlets for quicker cooking or any chicken parts you have available. Once the chicken is grilled or sautéed, let it rest. This can be done in advance if you prefer to use leftover grilled chicken for a cold sandwich.
  2. Prepare the Bread: While the chicken is resting, toast your ciabatta rolls. Toasting adds a delightful crunch and enhances the overall texture of the sandwich.
  3. Assemble the Sandwiches:
    • Spread a generous amount of Caesar dressing on the inside of each roll.Place the grilled chicken on the bottom half of the roll.Top the chicken with chopped Romaine lettuce and freshly grated Parmesan cheese. If you like, you can drizzle a bit more Caesar dressing over the lettuce for extra flavor.Add red onion slices if you prefer an additional layer of crunch and flavor.
