Chicken Caesar Salad Sandwiches

As summer rolls in, finding quick and easy dinner solutions becomes a priority for many families. One such recipe that fits the bill perfectly is Chicken Caesar Salad Sandwiches. These sandwiches are not only delicious but also incredibly versatile. Whether you’re grilling fresh chicken or utilizing leftovers from a previous meal, this dish ensures a cool, refreshing idea for hot summer evenings.

Ingredients

  • 1 pound of fresh boneless, skinless chicken breast (thin chicken cutlets preferred, but you can use anything from rotisserie chicken to chicken tenderloins)
  • Ciabatta rolls (toasted)
  • Caesar dressing
  • Romaine lettuce, chopped
  • Freshly grated Parmesan cheese
  • Red onion slices (optional)
  • Spices for the chicken- I recommend lemon pepper seasoning

Instructions

  1. Grill the Chicken: Start by grilling your chicken. You can either use thin chicken cutlets for quick cooking or any other chicken parts you have on hand. Once grilled, set the chicken aside to rest. This step can be done in advance if you want to use leftover grilled chicken for a cold sandwich version.
  2. Prepare the Bread: While the chicken is resting, toast your ciabatta rolls. Toasting adds a delightful crunch and enhances the overall texture of the sandwich.
  3. Assemble the Sandwiches:
    • Spread a generous amount of Caesar dressing on the inside of each roll.
    • Place the grilled chicken on the bottom half of the roll.
    • Top the chicken with chopped Romaine lettuce and freshly grated Parmesan cheese. If you like, you can drizzle a bit more Caesar dressing over the lettuce for extra flavor.
    • Add red onion slices if you prefer an additional layer of crunch and flavor.
    1. Serve: Close up your sandwiches and serve immediately. Enjoy them as a warm dinner or chill the assembled sandwiches for a crisp, cool meal that’s perfect on a sultry evening.

Ingredients:

  • ½ cup mayonnaise
  • 1 medium garlic clove, minced 
  • 2 teaspoons lemon juice, to taste
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Worcestershire sauce, to taste
  • ⅛ teaspoon fine salt
  • ⅓ cup (1 ounce) finely grated Parmesan cheese
  • 1 tablespoon water
  • Freshly ground black pepper, to taste

Instructions:

  1. In a small bowl, combine the mayonnaise, garlic, lemon juice, Dijon, and Worcestershire sauce, and salt. Stir to combine.
  2. Stir in the Parmesan, followed by the water. Season generously with black pepper, to taste.
  3. Transfer the dressing to a container with a tight-fitting lid and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
