Let’s call them by the original name I had my heart set on: “Oat Jammies”…until I realized that jammies is not a word, and definitely should be removed from my juvenile vocabulary.  Moving on, these cookies are absolutely amazing!  Cookies? Well, by true definition, these are scones.  A sweetened, buttery oat biscuit with jam…perfect for a social brunch or a Sunday morning treat.  For a simple recipe that has you dump all the ingredients into a food processor (kitchen aid stand mixer, step aside for this one), it certainly is one of the best cookie/scone recipes I have.

What makes these so incredible?  Perhaps it’s the secret ingredient…yogurt! Now don’t exit out of this blog after reading that; I assure you these are worth trying, even if you are not a fan of yogurt!  The yogurt mixed with the oats make these a delicate, but hearty treat.  With the tiniest dollop of jam on top, you will be in awe over these little delights.

I have made these with many different brands of yogurt, and found that this brand yields the absolute best and subtle taste! You can find this in most grocery stores health food stores.

Technically a scone, from the biscuit family. These are perfect if you are craving a sweet treat and are out of eggs …no eggs required!

A FEW NOTES:

You’ll want to make sure that the butter is cold.  Cold, as in right out of the fridge or even pre-chilled in the freezer for ½ hour -cold. 
Jam/Preserves not your thing?  You’re not alone, I’ve had these without the jam and its pretty good!  Maybe add some nuts or coconut flakes…or even dip them in chocolate!

Oat + Jam Scones

Description

A sweet, buttery member of the biscuit family – with added oats +jam for the ultimate brunch recipe!


Ingredients

Scale
  • 1 1/2 cups Self-rising flour OR all purpose flour + 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1/2 cup Sugar
  • 1/2 cup Salted butter (unsalted butter + ½ tsp salt), chilled
  • 1/3 cup + 2 TBS Vanilla yogurt
  • 1 cup Oats – quick oats or regular, I prefer regular.
  • Jam, your favorite flavor

Instructions

  1. Preheat your oven to 375° F.
  2. In a food processor (or mixing bowl), combine the sifted flour, baking soda, baking powder (if using all purpose flour), salt and sugar. Mix until well combined.
  3. Using your food processor (or a pastry cutter), blend the butter into the dry ingredients.
  4. Add the yogurt and mix
  5. Incorporate the oats.
  6. Scoop dough into approx.. 1″ rounds (I use a mini ice cream scoop) on baking sheet lined with parchment paper.
  7. Gently indent a small well on top of each cookie and drop a dollop of jam on each.
  8. Bake for approximately 6 minutes, until just barely golden. They overcook very easily!

Notes

Depending on preference, the jam can be added after the scones bake. Straight from the oven, while they are still warm depress a small well on top of the cookie. Drop a dollop of jam and set cookies on cooling tray.
