CRISP COOL REFRESHING

A perfect way to kick off the weekend!  Relax and unwind with the refreshing summer taste of fresh nectarines blended together with mint leaves and lemon.  This crisp & light mocktail is sure to be your next favorite!

When the endless Northeast snow finally moves on, and cold rain of spring dissipates, there is nothing better than resuming outdoor patio drinks with friends!  With this recipe, you can bring the fun to your own deck and have a more casual and less expensive ladies’ night.
Can you tell that my favorite ingredient in the kitchen is lemon?! Well, if you haven’t noticed, now you know. I cant tell you how many times I put a container lemon tree in my Amazon Prime cart…and then the reality of the unpredictable weather and short summers sets in. Maybe someday, in my coastal farmhouse. Until then, I will keep up with my garden and enjoy snipping fresh sprigs of mint for this recipe!
Serve these with or without alcohol.  For the recipe we keep this a “mocktail” for all ages!

Sparkling Nectarine + Mint Lemonade

Description

Crisp, cool & Refreshing summer drink for the whole family!


Ingredients

Scale
  • 5 cups of sparkling water
  • 1 cup fresh lemon juice
  • 1/2 cup sugar (or substitute)
  • 4 white nectarines – washed and sliced. Discard core
  • 2 sprigs of fresh mint- save a few leaves for garnish

Instructions

In a blender, combine the lemon juice, sliced nectarines, mint and sugar.

Pulse for about 1 minute.

In a large pitcher of ice, combine nectarine puree and sparkling water.  

Stir and serve chilled.  

Garnish with mint, and a slice of lemon & nectarine. 


Notes

You can sub. Organic lemonade for the lemon juice, just cut added sugar down to 1/8th cup

Replace sparkling water with tonic water and omit the added sugar
