Ingredients
1 cup all-purpose flour
2 cups rolled oats
1 teaspoon baking soda
1/2 teaspoon salt
8 tablespoons unsalted butter,softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup shredded zucchini, excess moisture lightly blotted
1/2–3/4 cup semisweet chocolate chips
Optional: 1 tablespoon maple syrup
Instructions
Start by preheating your oven to 350°F.
In a bowl, mix together the flour, oats, baking soda, and salt.
In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
Add in the egg, vanilla, and (optional) maple syrup. Beat until well combined.
Next, shred and lightly blot dry the peeled zucchini, then stir it into the wet mixture.
Gradually add in the dry mix until just combined.
Lastly, fold in the chocolate chips.
Using a cookie scoop or a spoon, drop the cookie dough onto a baking sheet lined with parchment paper.
Bake for 10-12 minutes or until the edges are golden brown.
Transfer them to a wire rack immediately to cool completely.
