Bananas.  I don’t like them. I don’t like eating or cooking with them.  But every so often, ill find a nice bunch of bananas on my counter with almost black peels and think “ugh not again, why do I buy these”.  So I decided to incorporate them into a bread that kids would love- my cousins,  who I will be pawning this loaf onto.

May I present my Simply Cinnamon Swirl Banana Bread. No nuts, just basic cinnamon bread with a hint of banana. A super quick, easy & kid friendly way to use up those old bananas before they end up in the garbage. Of course, nuts and chocolate chips can be added, but there is something so wonderful about this simple bread without all those fixings. Try it!

As with most of my recipes, this can be made in the Instant Pot – Directions are in the printable recipe card notes. I also linked the pressure cooker pan I use for this.

Instead of a simple banana bread, you can omit the cinnamon swirl mixture and add dried fruit, nuts and/or chocolate chips!

Simply Cinnamon Swirl Banana Bread


Description

The Best Cinnamon Swirl Banana Bread! Simple, but packed with flavor and kid approved!


Ingredients

Scale

For the Bread:

  • 2 cups self-rising flour

     Or 2 cups all purpose flour + 1 tsp. baking powder

  • 1 tsp baking soda
  • 1 cup ( 2 sticks) Butter melted
  • ½ cup sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 4 overripe bananas – mashed

For the cinnamon swirl:

  • 2 TBS melted butter
  • 2 Tsp Ground Cinnamon
  • 3 TBS Brown Sugar

Instructions

  1. Mix together sugar and melted butter that has been cooled slightly. 
  2. Incorporate the eggs and vanilla to the mixture. 
  3. Sift in the flour (and baking powder, if using all-purpose flour)
  4. Gently fold in the mashed bananas – do not over mix
  5. In a small saucepan melt 2 tbs butter. 
  6. Add in the sugar and cinnamon and remove from burner.

           *Mixture should be thick*

     7. Pour approx. 1/3 of batter into a greased 9×5 loaf pan.

     8. Drop a few dollops of the cinnamon sugar mixture onto the layer and swirl into the batter using a            butter knife.

      9. Repeat process until all the batter is in the loaf pan.

     10. Bake in a preheated 350 F oven for approx. 60 minutes or until toothpick comes out clean from               center of bread.

 

Best if served hot – but lasts in an airtight container for 3-5 days.

 

For Instant Pot cooking: follow all instructions and measurements as stated above. Then: 

  1. Pour batter into a greased spring form pan (making swirls of cinnamon/sugar mixture as instructed above)
  2. Cover loosely with aluminum foil 
  3. Pour 1 cup water into IP inner pot and place trivet in water
  4. Carefully lower spring form pan with bread batter onto the trivet.  (you can make a sling using tin foil)
  5. Close lid, then turn Venting Knob to Sealing position. Pressure Cook at High Pressure for 60 minutes + 15 minutes Natural Release. Turn the Venting Knob to Venting position. Open the lid.

Notes

1/2 cup of chopped nuts can be added, if desired. 

Remove cinnamon swirl mixture and add chocolate chips instead!

  1. Hi! This looks delicious. How long do you think it would take if you used the egg bite silicone holder?

    1. Thanks for checking out my recipe! Great idea for cinnamon banana bites – 14 minutes high pressure then a quick pressure release. Make sure to put the silicone mold on the trivet and 1.5 cup water underneath for an 8 qt pot. 1 cup for smaller pots. Enjoy!
